I want to make sure you are aware of Section 11-204A(1) of the Colorado Retail Food Establishment Rules and Regulations:
“If an imminent health hazard exists, such as, but not limited to, complete lack of refrigeration or sewage backup into the establishment, the establishment shall immediately cease food operations. Operations shall not be resumed until authorized by the Department.”
Closures for an ”imminent health hazard” have also occurred for situations such as no hot water due to a non-functioning hot water heater, and for extreme pest infestations. They are embarrassing, very costly and taint your reputation.
There is normally a similar provision in all states, so check with your health department if you are outside of Colorado.
Monitor your restaurant continually and be absolutely committed to your food safety efforts!
